Just figured this out myself the other day.

1. Use a .pak file reader like Winpak to view the pack file.
2.Add a directory in the texture dirctory called whatever you want.
3.Copy new .wal files to dirctory and save or recompile .pak file.
4.Delete quake2.tex file from Qoole directory and restart Qoole.

I think this is the only way so far until the Texture manager for Quake2 is
complete.

P.S.  Another cool thing to try is WAD2WAL.  I was able to convert a few
hundred Q1 textures to Q2 and add them into Qoole to use.
