I have found no-way to do the former, the later requires some experience
with the GUI.

To scale to only one direction (not axis, not possible - or I don't know
how if it is possible), click the arrow icon in the tool bar a few
times until it's pointing in a direction you want.  Now, when you scale it
will expand on both planes, but at least won't affect other elements.

To scale uniformly, click your object, hit "S", now right mouse click and
uniform scale will be something you can select.  It stay selected until
unselected for all other items.  

It's not where I would have put it, but at least it's available.

If anyone does know how to scale on one axis - please share.  I have to
admit it's annoying to "move" an object after scaling, zoom out, move up,
zoom in, etc - to get the new object to fit right.  Ideally, you could
grab an edge and expand just that side.
